Mint & Pomelo Prawn Salad

Method:
1. Mix dressing ingredients together.
2. Toss salad ingredients in dressing; garnish and serve.
Ingredients:
Dressing
150g Sweet Tamarind Sauce
100g sweet chilli sauce
Juice of ½ lime
Salad
15 cooked king prawns, halved lengthways 200g pomelo, segmented*
200g shredded carrot
150g sliced cucumber
20g coriander, chopped
20 mint leaves, chopped
Optional: 50g peanuts to garnish
*can substitute with grapefruit
