Sweet Tangy Tamarind Chicken
GET READY TO COOK
Method:
1. In a pan, heat some oil to a medium heat. Add chicken; stir fry for 3-4 minutes.
2. Add peppers and carrots; stir fry for 3-4mins or until cooked.
3. Add Sweet Tamarind Sauce; stir fry for 1-2mins. Add tinned tomatoes and pineapple pieces; mix well and cook for 2-3mins to desired consistency.
4. Garnish and serve.

400g Sweet Tamarind Sauce
400g tinned chopped tomatoes
1.2kg diced chicken thigh
300g diced mixed peppers
300g sliced carrots
200g tinned chopped pineapple
15g chopped coriander to garnish
