Street Food Inspiration
Lemongrass Sambal Paste journeys to the island paradise of Bali, one of our favourite street food and backpacking destinations. We were inspired by the dish babi guling (roasted Balinese pork) which we ate at Warung Babi Guling Sanur in the seaside town of Sanur, in particular the spice paste “base gede” that was rubbed all over the meat before it was roasted over open flame.
Like base gede, our Lemongrass Sambal is a heady aromatic mix of lemongrass, ginger and chilli which we slowly hand-cook to recreate the complex traditional Balinese flavours we experienced.
Use as a DRESSING for burgers & crispy chicken; mix with sweet chilli.
STIR FRY with chicken/beef & green beans.
Make a CURRY by adding coconut milk & chicken/prawns.
