Vietnamese Smoky Orange-Lemongrass Chicken
Get ready to cook
1. To prepare marinade, blend together Sweet Tamarind Sauce, orange juice, smoked paprika, lemongrass stems and chillies until smooth and combined.
2. Add marinade to chicken thighs and toss well. Leave to marinate for at least 1 hour.
3. Pre-heat oven to 180°C and roast for 30-35mins or until cooked. Garnish and serve with white rice and green salad.
400g Sweet Tamarind Sauce
200ml orange juice
2 tablespoons smoked paprika
5-6 lemongrass stems
4-5 large red chillies (deveined and deseeded)*
20 boneless chicken thighs
30g chopped coriander to garnish
Optional: Handful crushed peanuts to garnish
