Thai Mango-Mint Salad

Method:
1. Place all the salad ingredients in a large bowl.
2. Drizzle with lime juice and Sweet Tamarind Sauce; mix well.
3. Garnish with crushed peanuts and serve as a side salad.

250g shredded mango
250g shredded carrot
250g shredded cucumber
30g chopped mint
30g chopped coriander
2 limes, juiced
Optional: 50g crushed peanuts
