Pad Thai Chicken Nachos

Method:
1. Pre-heat oven to 180°C. Toss chicken in 100g Sweet Tamarind Sauce; bake in the oven for 6-8mins to char slightly.
2. Make dressing by combining 150g Sweet Tamarind Sauce with sriracha chilli.
3. Divide tortilla chips into 5 equal portions. Place on a baking dish and top with chicken and cheese. Place in oven for 2-3mins to melt cheese. Top with 3 Tbsp dressing and carrot. Garnish and serve.
Ingredients:
250g Sweet Tamarind Sauce
500g cooked shredded chicken
350g tortilla chips
300g grated cheddar
150g shredded carrot
75g sriracha chilli sauce or hot sauce
5 lime wedges to garnish
30g chopped coriander to garnish
