Malaysian Coconut and Turmeric Vegetable Curry (Sayur Lodeh) (V) (VGN)
GET READY TO COOK
Method:
1. In large lidded pan, heat up some cooking oil to medium high heat. Add vegetables; stir fry for 4-5mins.
2. Add Malay Curry Paste; mix well and stir fry for 1-2 minutes.
3. Add coconut milk; mix well. Bring to boil then lower heat to simmer for 15-20mins to desired consistency. Garnish and serve.
Ingredients:
400g Malay Curry Paste
800ml tinned coconut milk
500g diced aubergine
500g sliced carrots
400g cut green beans
400g cauliflower, cut into florets
15g chopped coriander to garnish
