
Turkey Shepherd’s Pie with Butternut Mash
Get ready to cook
Method:
1. Steam butternut until tender and cooked. Place in a large bowl, add a dollop of butter and mash until smooth. Set aside.
2. In a saucepan, heat some oil to a medium heat. Add onion; stir fry to 2-3mins. Add turkey; stir fry for 2-3mins to brown. Add carrots and dried thyme; mix well and stir fry for 2-3mins. Add Shandong Sweet Paste and stock; mix well and simmer for 20-30mins. Add peas and corn starch; mix well and heat through.
3. Place mixture in a baking dish and top with butternut mash and cheese. Bake at 160°C fan for 20-25mins until cheese is melted and top is golden. Garnish and serve.

600ml chicken/veg stock
1kg diced/minced turkey
1kg butternut
200g diced white onion
200g diced carrots
200g frozen peas
2 tsp dried thyme
2 tsp corn starch or flour
200g grated cheese
10g chopped parsley to garnish
