Spicy Watermelon Street Salad
Sweet juicy watermelon with the salty tang of feta, tossed in a chilli citrus dressing – all at once cooling, tingly and refreshing!

Method:
1. Cut watermelon into large dice. Halve cucumber lengthwise then core; cut into slices. Roughly chop mint leaves. If desired, lightly toast pine nuts in a pan at a low heat for approx. 5 mins and set aside.
2. For dressing, whisk Mozambican Coconut Piri Piri with orange juice in a small bowl.
3. Place watermelon, cucumber and mint into a salad bowl. Crumble over feta and drizzle with dressing. Toss to mix well. Garnish with pine nuts and serve immediately.

¼ Watermelon (200g)
½ Cucumber
100g Feta Cheese
15g Fresh Mint
60ml Orange Juice
30g Pine Nuts

FOODIE TIPS
Toasty Nuts
Try toasting pine nuts in the microwave - it’s easier and faster than using a pan or oven and produces great results. Just put the pine nuts on a plate and microwave for 1 min then in 30s intervals thereafter. Each time stir the nuts to ensure they don’t brown too much on one side. To get an even deeper roast toss the pine nuts with ½ tsp vegetable oil before microwaving.
