Smoky Ancho Chicken Fajita Pasta
Get ready to cook
1. Cook pasta as per packet instructions; drain and set aside.
2. Separately heat up some cooking oil in a pan. Add onions; stir fry for 2-3mins.
3. Add meat; stir fry for 4-5mins. Add peppers; stir fry for 3-4mins or until everything is cooked. Add Mexican Chilli Orange Paste; mix well and cook for 1-2mins.
4. Add cooked pasta and lime juice; mix well. Remove from heat and fold in grated cheddar. Garnish and serve.
400g Mexican Chilli Orange Paste
800g dried pasta (for 1.6kg cooked)
200g diced white onion
600g diced chicken / turkey
500g diced mixed peppers
200g grated cheddar
2 limes (juiced)
15g chopped coriander to garnish
