Portuguese Coconut Piri Piri Seafood Paella
Get ready to cook
1. In a large pan, heat some cooking oil. Add rice and 200g Mozambican Coconut Piri Piri Paste; stir fry for 2-3mins. Add parsley, rosemary, tinned chopped tomatoes, chicken stock; mix well. Bring to boil and reduce to medium-low heat. Simmer for 20mins. Add more stock if needed.
2. In a separate pan, stir fry peppers. Add chicken, chorizo and 200g Mozambican Coconut Piri Piri Paste; cook for 10mins. Add mixed seafood and peas; stir fry until cooked.
3. Plate up rice and top with chicken and seafood mixture.

2 teaspoons rosemary
600g diced chicken thigh
400g mixed seafood
200g diced chorizo
200g diced red peppers
200g frozen peas
400g paella rice
400g tinned chopped tomatoes
600ml chicken stock
30g chopped parsley
Optional: 10 lemon wedges
