Orange, Mint & Sichuan Pepper Prawn Noodle Salad
Get ready to cook
Method:
1. Mix dressing ingredients together.
2. Toss salad ingredients in dressing and lime juice; garnish and serve.
Ingredients:
Salad
200g cooked prawns*
200g chilled rice vermicelli noodles
100g shredded carrot
100g seeded and sliced cucumber
100g diced orange segments
50g sliced tomato
15g mint, chopped
15g coriander, chopped
1 lime juiced
Optional: crushed peanuts to garnish
Dressing
125g sweet chilli sauce
50g orange juice
*for a vegan option, substitute with edamame or pan fried tofu
