
Nasi Goreng Fried Rice and Chicken Satay Skewers with Coconut Peanut Sauce
Get ready to cook
Method:
1. For skewers, place diced chicken in a large bowl. Add Nasi Goreng Paste and coconut milk; mix well and marinate overnight or for at least 30mins. Skewer and grill.
2. For peanut sauce, in a pan, add Satay Paste and coconut milk; mix well and heat until sauce thickens.
3. For rice, heat some oil in a pan to medium-high heat. Add carrot, green beans and spring onion; stir fry 1-2mins. Add chilled rice and stir fry for 1-2mins. Add Nasi Goreng Paste; mix well and stir fry for 2-3mins and heat through.
4. To assemble, place rice in the centre of a plate. Place salad on one side. Place 3 skewers on the other and drizzle with peanut sauce. Top rice with a fried egg and prawn crackers. Serve immediately.

Fried Rice
200g Nasi Goreng Paste
1.2kg cooked Thai jasmine rice, chilled overnight
200g shredded carrot
200g green beans
3 sliced spring onions
Chicken Skewers
15 chicken thighs, diced
150g Nasi Goreng Paste
100ml coconut milk
30 wooden skewers
Coconut Peanut Sauce
225g Satay Paste
225ml coconut milk
Salad
1 sliced cucumber
2 sliced tomatoes
Optional: Prawn crackers
