Grilled Coconut Piri Piri Chicken (Frango Piri-Piri)
Get ready to cook
1. Score and marinate chicken pieces in Mozambican Coconut Piri Piri for at least 30 minutes.
2. Pre-heat a fan oven to 180°C. Place chicken pieces on a lined baking tray. Roast chicken for 30-40 mins or until cooked.
3. In the meantime, combine dressing ingredients in a large bowl. When chicken is ready, add to the bowl and toss until evenly coated with dressing.
4. Garnish and serve immediately.
250g Mozambican Coconut Piri Piri
20 boneless chicken thighs
150g Mozambican Coconut Piri Piri
10g chopped coriander to garnis
