Gin Roasted Chicken with Apple and Mint
Get ready to cook
1. Combine chicken thighs, apples, onion, gin and Cuban Chimichurri together; mix well.
2. Lay on a baking tray lined with parchment and spread in a single layer. Bake in a pre-heated fan oven at 180°C for 30-40mins until cooked.
3. Garnish and serve

15g chopped coriander to garnish
