Fiery Ginger Beer Chicken
Get ready to cook
1. Place chicken thighs in a large bowl. Mix in Mozambican Coconut Piri Piri, ginger beer and grated ginger. Leave to marinate for at least 30mins or overnight in the chiller.
2. Pre-heat a fan oven to 180°C. Place chicken pieces on a lined baking tray. Roast chicken for 30-40 mins or until cooked.
3. For dressing, whisk ingredients together. Toss cooked chicken in dressing and serve with Cool Watermelon-Mint Salad and fries.
250g Mozambican Coconut Piri Piri
20 boneless chicken thighs
1 can (330ml) ginger beer
1½ Tbsp finely grated ginger
150g Mozambican Coconut Piri Piri
2 tsp finely grated ginger
