Fall-Apart Balinese Beef Cheeks
Get ready to cook
1. Heat some oil in a large sauce pan over medium heat. Add onions and stir fry for 2-3mins until soft and golden. Add beef cheeks; stir fry for 3-4mins to brown. Add Lemongrass Sambal Paste; stir fry for 2-3mins.
2. Add coconut milk and new potatoes; mix well. Bring to a simmer, partially cover and cook for 2hrs or until beef is tender. Garnish and serve with jasmine rice.
400g Lemongrass Sambal
800ml tinned coconut milk
1.2kg beef cheek, cut into 10 equal sized chunks
400g new potatoes, scrubbed and halved
200g diced white onion
15g chopped mint, to garnish
Optional: 30g crushed peanuts, to garnish
