Balinese Lemongrass Beef Curry
Get ready to cook
Method:
1. Heat some oil in a large lidded pan over medium heat; add Lemongrass Sambal Paste; stir fry for 1-2mins.
2. Add beef and stir fry for 4-5mins to brown. Add carrots and green beans; stir fry for 3-4mins.
3. Add coconut milk; mix well. Bring to boil then simmer. Partially cover and slow cook on a medium-low heat for 1½-2 hours or until meat is tender. Add some water if needed.
4. Garnish and serve.

800ml tinned coconut milk
1.2kg diced stewing beef
300g cut green beans
300g sliced carrots
15g chopped coriander to garnish
